Julie Goodwin shares her top tips for perfect potatoes every time

<p dir="ltr">Who doesn't love a good, hearty, delicious serving of fluffy and decadent potatoes?</p> <p dir="ltr">Original <em>MasterChef Australia</em> champion Julie Goodwin has shared her ultimate hacks for cooking the perfect potatoes every time, whether they’re mashed, roasted or baked.</p> <p dir="ltr">According to Julie, there are three key things every home cook needs to keep in mind the next time potatoes are on the menu. </p> <p dir="ltr"><strong>Make sure you have the right potatoes </strong></p> <p dir="ltr">Depending on whether you want baked, mashed, roasted, or any other way you want to prepare your potatoes, it all starts in the supermarket. </p> <p dir="ltr">"I find that for things like mashed potatoes and gnocchi and rostis you want a floury potato, so the general rule is dirty potatoes for those things," Julie told <em><a href="https://kitchen.nine.com.au/latest/julie-goodwin-top-three-tips-to-cook-potatoes-robertson-potato-festival/4d16ba12-bf14-4af2-990e-dcf0e89c30ee">9Honey</a></em>.</p> <p dir="ltr">"And then for stuff like potato salads, boiled baby potatoes, and potato bake, it's better to have a waxy potato because they hold their substance better. And those are the ones that are sold clean, so things like the Pontiac and Desiree with the pink skin or the washed potatoes with the white skin."</p> <p dir="ltr">"If you want to use them in an Irish stew to break down and thicken the sauce you've got to use a floury potato," she says. "So tend to your dirty ones."</p> <p dir="ltr">She says that if you're buying a clean, waxy potato, you won't have to peel them since the skin is supposed to be edible.</p> <p dir="ltr">However, if you're buying a dirty, floury potato, then you're going to want to peel the dirt off first and then wash off the residue.</p> <p dir="ltr"><strong>Get those crispy edges </strong></p> <p dir="ltr">As every home cook knows, the key to the perfect roasted potato is for the inside to be soft and fluffy while the outside stays crispy. </p> <p dir="ltr">It can be a tricky balance to master, but Goodwin says there's a simple way to get it right every time.</p> <p dir="ltr">"I like to par boil them before I roast them. Just so that they go a bit fluffy around the edges," she explains. "What happens is those bits go really crispy and lovely."</p> <p dir="ltr"><strong>Let the flavour flow </strong></p> <p dir="ltr">When it comes to seasoning your potatoes, it's hard to know what flavours will suit your dish best. </p> <p dir="ltr">According to Goodwin, more is less when you season potatoes, so it's best to close the spice cabinet.</p> <p dir="ltr">"Salt is absolutely the number one, pepper's beautiful [but] it depends on what the meal is," she says. "So if you're doing a bit of a Portuguese or Spanish inspired meal you might put some paprika on there.”</p> <p dir="ltr">"But I really love rosemary and that's beautiful if you pound that up with your salt and put it on the potatoes that makes it really nice."</p> <p dir="ltr"><em>Image credits: Getty Images / Instagram</em></p>

Woman fined after paid car park gets set up around her parked vehicle

<p>Josephine Williams had been leaving her car in a gravel clearing at Westgate in Auckland, alongside other commuters to catch the bus into the city for months. </p> <p>The New Zealand woman was left with a "nasty surprise" when she returned from work on Monday to find a NZ $85 ($77) fine sitting on her windshield. </p> <p>"To my unfortunate surprise - and many others - I was greeted by an $85 parking ticket for a breach and a flyer from Wilson Parking saying paid parking had started that day," Williams told <em>Stuff</em>.</p> <p>"But what breach exactly was made? How was I supposed to know paid parking started that day when there was nothing at all displayed anywhere in the car park?"</p> <p>Williams claimed that the Wilson Parking car park had been set up around her already parked car, even providing dash cam footage that showed her pulling into the gravel clearing at 7.45am, with no paid parking signs or Wilson branding in sight. </p> <p>By 6pm, a large red and white Wilson sign had been put up at the entrance, with "12 hours for $4" written on it. </p> <p>"Wilson deliberately put their sign up sometime after 9am and then took it upon themselves to fine every single car that was already parked there from the morning," Williams said.</p> <p>"$85 is a lot of money - it would have been two weeks' worth of grocery shopping for me," she added. </p> <p>"I'm lucky that I know the law and my rights, but some other people might not. What about students or the elderly or people who don't know English well?"</p> <p>She estimated that there was usually around 50 and 100 cars in the gravel clearing. </p> <p>Wilson argued that the carpark was always there and they had just added more signage, but have since waived Williams' fine after she lodged a request to have it reviewed by Parking Enforcement Services. </p> <p>Wilson Parking also said that they had started to set up the car park and installed a "clear signage" on April 22. </p> <p>"It was not set up around parked cars on 29 April as suggested," a Wilson spokesperson said.</p> <p>"Several payments were made by customers via the Parkmate app from 22 April proving that signage on the site was clear and effective," they said.</p> <p>They added that on April 29 more signs were added to all entry points of the car park. </p> <p>"In acknowledgment of the increased signage added on the 29th at the entry we've made the decision to refund all payments made until 30 April and waive any breach notices issued up to this date."</p> <p>They also denied issuing any breach notices before the signs were put up.</p> <p>"Payment options were available and signed from 22 April - but no infringement notices were issued prior to the 29th."</p> <p><em>Images: Stuff</em></p> <p> </p>

Dean Jones’ daughter’s touching wedding tribute to her late father

<p>The daughter of late cricket legend Dean Jones has paid a special tribute to him on her wedding day. </p> <p>Phoebe Jones, one of the cricketer’s three children, tied the knot with partner Dario Gomez on the island paradise of Boracay in the Philippines last Wednesday.</p> <p>As a tribute to her late father, Phoebe had the number 324 embroidered at the end of her veil. </p> <p>Dean was a batter and the 324th person selected to play Test cricket for Australia. He was inducted to the Australian Cricket Hall of Fame in 2019. </p> <p>“Feeling all the love after the week of our dreams,”  she captioned the photos posted to Instagram on Saturday.</p> <p>The wedding had a white theme and featured a stunning sand sculpture with the words “Dario &amp; Mother booted off ride share app for her unusual name

<p>A young Sydney mother has been booted off popular ride sharing app Uber, after they deemed her birth name too inappropriate. </p> <p>Swastika Chandra's first name means good luck and prosperity in her native Sanskrit language, and holds a lot of cultural significance and connection to her Hindu heritage. </p> <p>However, to global transport app Uber, her name was deemed too offensive to be let on the platform, as they said her name violates their terms and conditions. </p> <p>The 35-year-old grew up in Fiji, where she says her name was commonly heard in classrooms throughout her childhood.</p> <p>"It is a very common name. I personally know four or five other girls with the same name," she told <a href="https://9now.nine.com.au/a-current-affair/uber-bans-sydney-woman-from-using-service-because-of-her-first-name/2771dd1f-b9fd-4ba6-8045-671145bc0c02" target="_blank" rel="noopener"><em>A Current Affair</em></a>. </p> <p>"In school, we had two or three other girls with the same name. It means good luck. It means good things for me."</p> <p>Chandra didn't run into any issues using her name on her birth certificate, Australian citizenship paperwork, her health care card or her driver's licence. </p> <p>However, last October Uber banned her account, claiming her name was a violation of their terms of use due to its appropriation by Adolf Hitler's Nazi Party and neo-Nazis.</p> <p>Coinciding with the start of the Israel-Hamas war, Uber brought in new guidelines on words that could be offensive - including swastika.</p> <p>Inadvertently caught up in the middle of a policy which had the best of intentions, Chandra was told she would have to change her name to get back on the app.</p> <p>"I was putting in an order for food one afternoon and went to the payment stage and this pop-up came up saying, 'Your first name is in violation and you need to change your name on the app'," she explained.</p> <p>Chandra has a deep understanding of her name's very troubling double meaning, but she says the community needs to know the word's origins.</p> <p>"They don't know that the Hindus used it for thousands of years before Hitler used it in the wrong way," she said.</p> <p>"A bit of education, I think, is needed. I'm very proud of my name. I believe in the good that comes with it and I'm not changing it for anyone."</p> <p>Five months later, Uber has backed down from their decision and allowed her to rejoin the app, although it took intervention from Australia's peak Hindu body, The Hindu Council, support from the Jewish community and the NSW attorney-general to make it happen. </p> <p>The Jewish Board of Deputies also backed Chandra's fight, telling A Current Affair: "There is a difference between Ms Chandra innocently using her name and the deployment of a sinister symbol."</p> <p>The young mum has a message for all the other young girls who might have a different name to others, saying "Don't let the past be a stepping stone for your future."</p> <p>"Be proud of your name. "I miss her hugs": British acting legend shares heartbreaking loss

<p>Actor Warwick Davis has shared the heartbreaking news of his wife's death. </p> <p>The actor, known for his roles in <em>Harry Potter</em> and <em>Star Wars</em>, took to social media to share the news of his wife Samantha's death, who passed away at the age of 53. </p> <p>“Her passing has left a huge hole in our lives as a family. I miss her hugs”, Warwick, 54, said.</p> <p>He added, “She was a unique character, always seeing the sunny side of life she had a wicked sense of humour and always laughed at my bad jokes.</p> <p>“Without Sammy, there would have been no Tenable quiz show, no Willow series. No Idiot Abroad Series 3.”</p> <p>Warwick said Samantha was his “most trusted confidant and an ardent supporter of everything I did in my career”.</p> <p>The couple’s children, Harrison and Annabelle, added, “Mum is our best friend and we’re honoured to have received a love like hers</p> <p>“Her love and happiness carried us through our whole lives”.</p> <p>Warwick and Samantha met on the set of the movie Willow in 1988 and got married three years later. </p> <p>Samantha had achondroplasia, a bone growth disorder that causes disproportionate dwarfism.</p> <p>Warwick has previously opened up about his wife’s health after she was rushed to hospital with sepsis in 2018, and had to undergo several different surgeries to stabilise her condition. </p> <p>Warwick, co-founder of charity Little People UK, has often spoken out about the health battles related to his condition, as well his wife’s.</p> <p>He was born with Spondyloepiphyseal dysplasia congenita (SED), an extremely rare genetic form of dwarfism, which has been inherited by both their daughter Annabelle and son Harrison.</p> <p><em>Image credits: Getty Images </em></p>

"Just doing her job": Hero cop Amy Scott breaks silence after Bondi stabbing

<p>The hero police officer who shot Joel Cauchi after his killing spree has spoken out after the devastating incident. </p> <p>NSW Police Inspector Amy Scott was confronted by the knife-wielding 40-year-old after he had fatally stabbed six people and injured several others at Bondi Junction Westfield on Saturday afternoon. </p> <p>Witnesses of the incident recall hearing the officer shout for Cauchi to "put it down" before the knifeman charged at her, prompting her to fire her weapon and shoot him dead. </p> <p>“Amy is content with what she had to do," Police Association of NSW boss Kevin Morton said. </p> <p>“I spoke to her last night and again this morning and she said, ‘It was a night with not a lot of sleep’.”</p> <p>Mr Morton said the officer, who he has known personally for years, was playing down the praise she had received after being dubbed a "hero" for her actions. </p> <p>“She knows she has been tagged a hero but to her she was doing her job. I didn’t ask her about the exact incident, because she is yet to be formally interviewed,” he said.</p> <p>“Everyone will be keeping an eye on her obviously, there will be a lot of support from everyone,’’ he said</p> <p>She also drew praise from Prime Minister Anthony Albanese, and NSW Premier Chris Minns, as well as NSW Police Commissioner Karen Webb.</p> <p>“She showed enormous courage and bravery,” Ms Webb said.</p> <p>Witnesses backed up the officer's actions at the shopping centre, as Bondi man Jason Dixon witnessed Inspector Scott's response firsthand. </p> <p>“All she said was ‘Put it down’. Just once. Jess Rowe explains her husband's absence from the news desk

<p>Jessica Rowe has shared the reason why her husband Peter Overton has been absent from his presenting duties on the <em>9News</em> desk for the last few weeks. </p> <p>Taking to her Instagram, Rowe explained that Overton has been at home recovering from surgery and will remain on leave for another few weeks. </p> <p>“Many of you have been missing Petee from your TV screens these past couple of weeks & have asked me where he is!” the 53-year-old began in her post. </p> <p>“Well he’s at home recovering from hip replacement surgery & getting lots of TLC. <p>A mother has been killed in a horrific car crash while on her way to a wedding in regional NSW, just hours after announcing she was expecting her third child. </p> <p>Shellymaine Ah Foon, 32, her partner Troy, and their two young daughters, aged six and two, were on their way to a wedding in Mudgee, NSW when their SUV crashed at Aarons Pass, about 2pm on Friday. </p> <p>Foon was left with critical injuries and was taken to Mudgee hospital, but soon passed away. </p> <p>Her partner was seriously injured and airlifted to Westmead Hospital to undergo surgery after suffering several fractures to both limbs on his left side. </p> <p>Their two daughters were also taken to the same hospital. </p> <p>A family member, who wished to remain anonymous, confirmed the sad detail to 7News. </p> <p>“We spoke to Shelly on the Thursday night, and she told us she was pregnant,” she said. </p> <p>“She was meant to go for tests when she came back from Mudgee to see how far along she was.”</p> <p>Foon was remembered as a "social butterfly" who could “strike up a conversation with anyone.” </p> <p>“She was very family oriented, was always there for anyone who needed anything, she was very selfless with her time,” the family member said. </p> <p>“Her death has really impacted a whole community of people,” she added. </p> <p>A <a href="https://www.gofundme.com/f/in-loving-memory-of-shellymaine-ah-foon" target="_blank" rel="noopener">GoFundMe</a> page has since been organised to help cover funeral costs, support Troy following his surgery, and help Foon's family, who are largely based overseas. </p> <p>“Troy won’t be able to go to work while he recovers,” the woman said.</p> <p>“He still has to undergo rehab, and he will be on crutches for some time.”</p> <p>Their two daughters have since been discharged from the hospital, and are in the care of family while Troy recovers. </p> <p>The family friend added that Foon's love for her kids was exceptional saying: “she was the light of Troy and her girls’ lives.</p> <p>“Their world has changed forever and the love their Mum gave them will never be replicated ever again.”  </p> <p>Police said investigations are still underway into the circumstances leading up to the crash, with the other driver taken to Mudgee Hospital with minor injuries. </p> <p><em>Images: 7News</em></p>

Daughter's incredible gesture surprises her cancer-stricken mother

<p>Slain TV presenter Jesse Baird has been farewelled by his loved ones at an emotional memorial service in Melbourne, one month after he was killed alongside his partner. </p> <p>Hundreds of friends and family packed into Melbourne’s Plenty Ranges Arts and Convention Centre, all donning bright colours to remember the 26-year-old.</p> <p>Baird's mother Helen spoke about her "darling boy" in a tear-jerking tribute, saying, “My beautiful, generous, loving, precious, caring and talented boy, our hearts and lives are changed forever,”</p> <p>“I promise to fight for you and make you proud. My heart is broken my darling boy, and I love you more than this world."</p> <p>"Our hearts and lives are changed forever and there is less sparkle in the world. There will never be another you."</p> <p>Jesse's father Gary added, “You squeezed 100 years of life into 26 and our hearts are broken. You’ll be missed but never forgotten.” </p> <p>Kourtnee, Jesse's sister, battled through floods of tears to farewell her brother, saying, "You are the absolute light of my life. “Was I right?": Pauline Hanson repeats her call for halt on immigration

Edwina Bartholomew reveals the truth behind her unconventional marriage

<p>Edwina Bartholomew has shared why she doesn't live with her husband full time, and why the unconventional arrangement works for their family. </p> <p>The <em>Sunrise</em> star first spoke about her unusual situation with husband Neil Varcoe in 2023, when she admitted the married couple no longer slept in the same room. </p> <p>Now, speaking candidly to <a href="https://www.nowtolove.com.au/celebrity/sunrise-edwina-bartholomew-career-family/" target="_blank" rel="noopener"><em>Now to Love</em></a>, Bartholomew has share more insight into their marriage arrangement and how it first began. </p> <p>“Strangely, it works,” Edwina said. </p> <p>“We were never ‘date night’ people, but now we’re apart, we go to that extra effort when we’re together to go out for dinner, lunch or to a movie.”</p> <p>The <em>Sunrise</em> presenter went on to share that the reason Neil first moved out of the city was so he could recover from chronic fatigue syndrome, which he’s been battling for six years.</p> <p>Neil now lives in the Central West of NSW, three hours from where Edwina lives in Sydney. </p> <p>“I think he’s the best he’s been for a number of years just by virtue of having that space to recover – eating healthily, exercising, having a really regimented routine,” she said.</p> <p>“He’s actually really good, which is fantastic, because for a while he definitely wasn’t and it was challenging for both of us. As a wife, it’s hard to see your husband go through that, and hard for him to miss out on things because he can’t physically be there.”</p> <p>Unsure how long the arrangement will last, Edwina hasn't ruled out moving to the country in the future to be with her husband. </p> <p>"I think I'd miss the adrenaline of all the back-and-forth, and the excitement,” she admitted. “But sure, one day, it would be lovely to be able to have a family life that’s based in the country – in the distant future.”</p> <p><em>Image credits: Instagram </em></p>

"Go enjoy your life": Young woman announces her own death

<p>A young woman has announced the news of her own death after a gruelling battle with cancer, while sharing her wishes for her grieving loved ones. </p> <p>Daniella Thackray, a 25-year-old from Leeds, took to social media to share the her heart-breaking final words, after an eight-month battle with the rare disease. </p> <p>The young digital marketing specialist had pre-written the message for her family to post on her behalf after dying of cholangiocarcinoma, a type of cancer that forms in the bile ducts.</p> <p>The emotional message paid tribute to her family, fiancé Tom, and dog Leo, as she encouraged her loved ones to “enjoy the little things” in life and “cherish every moment” after she had “gone”.</p> <p>She wrote: “If you’re reading this then it means I have died from my battle with cancer and my family are posting my final message on my behalf.</p> <p>“Firstly, I just want to say that not all cancers are caused by lifestyle choices, in some cases it’s genetics or unfortunately it just happens." </p> <p>“In my case, despite me being very healthy and active, a cancer started in my bile ducts which was not caused by anything in my control and my life was never the same again."</p> <p>“Cholangiocarinoma is a rare aggressive cancer with often no obvious causes and no cure’.. I really really do hope that in the years to come more research is done about this horrid cruel disease so that more lives can be saved.”</p> <p>Despite her devastating diagnosis, she chose “not to mourn life” and make the most of her time. </p> <p>Daniella added: “So with that being said, although we can’t control what happens to us, we can control how we react. I chose not to mourn the life I was losing despite being so devastated, but to instead enjoy every moment I had left."</p> <p>“As I have always said and believed, you should enjoy the little things in life and cherish every moment! Romanticise your life! Do whatever makes you happy and don’t let anyone take the joy of life away from you." </p> <p>“I LOVED my life. Everything I had achieved was what I wanted. I loved my job, my fiancé, my family, my friends and my dog, and the house we were going to buy and the future we were making for ourselves."</p> <p>“Leo my fur baby was definitely brought into my life to help brighten my darkest days."</p> <p>“And lastly to my dear, beautiful Tom, I love you and always will. Thank you for supporting me and bringing so much love and happiness into my life. Go enjoy your life now, you deserve it.”</p> <p>Her message has already gained more than 30,000 likes, while hundreds of people rushed to leave their condolences to her loved ones.</p> <p>One person wrote, "Such courageous words from someone that I’ve never met. “Entitled” bride unleashes after only seven people RSVP to her wedding

<p dir="ltr">A furious bride has been slammed online after unleashing on a lengthy tirade, calling out her friends and family who aren’t attending her wedding. </p> <p dir="ltr">Sara took to Facebook to share the extensive rant about her upcoming nuptials, after only seven people RSVP’d to the big day. </p> <p dir="ltr">The American bride-to-be called out those she invited to her destination wedding, saying they showed how little they “really” cared about her and her fiancé.</p> <p dir="ltr">“When we invited our friends and family to our destination wedding in Thailand, only nine people RSVP'd. Out of 150!!! OK, I get it, paying $3,000 to share my special day is too much for some of you. I'd pay for yours, but whatever,” she wrote. </p> <p dir="ltr">“But then, when we changed the wedding to be in Hawaii, so it's within everyone's reach, only seven of you RSVP'd? It costs less but less if you want to come? Is that what you think of me? You can't spare $2,000 to come and share our happiness?”</p> <p dir="ltr">Sara said that she was willing to take drastic measures to make up for the disrespect she'd been shown by her loved ones. </p> <p dir="ltr">“I'm tempted to just elope and not let any of you be part of our happiest day. This is it guys, you have three days to respond to our e-vites or we're deleting you off Facebook and good luck keeping up with our lives then.”</p> <p dir="ltr">“And don't get me started on the registry - only the cheap stuff is gone, I swear I thought I had better friends.”</p> <p dir="ltr">“[My fiancé] and I are asking you to reconsider.”</p> <p dir="ltr">Sara’s unhinged rant was quickly shared to a Facebook group dedicated to shaming people’s wedding choices, where it garnered hundreds of comments slamming the bride. </p> <p dir="ltr">“People who get married abroad have chosen not to have guests at their wedding,” one person said.  </p> <p dir="ltr">“Does she not understand people have jobs and kids or just simply don't want to spend thousands on someone else's wedding?” another asked. </p> <p dir="ltr">“If I was her friend I’d save her a job and unfriend myself after reading that,” a third person admitted.</p> <p dir="ltr"><em>Image credits: Shutterstock</em></p>
